Communal tables, a room modeled on a European beer hall, and a menu built entirely around beer, pork, and oysters — Paul Kahan's Fulton Market spot has been loud and unbothered by it since 2009, and it's carried a James Beard Award home along the way. The oyster program is the real anchor: $2 a shell during the Monday-through-Friday, 4-6PM happy hour (along with cheaper beer-hall snacks like beef fat fries and stuffed chicken wings), a full raw bar the rest of the time, and a habit among regulars of asking for the off-menu vegetable platter, which the kitchen apparently never blinks at putting together from whatever came in that day. Every dish on the menu lists exactly where its ingredients came from — a small detail that says a lot about how seriously this place takes sourcing without ever making a show of it.

It's more kid-friendly than the beer-hall-and-communal-table setup might suggest -- ask for one of the booths with its own door if you want to keep a family group contained. Reserve ahead for dinner; walk-ins are a real gamble on a Friday, and there's no lot of its own, just valet across the street at Beatrix after 4PM or a hunt for street parking.
