Super GemChicago Exclusive Gem$$$Park worked as sous chef helping open both Mirai and Japonais before running Badaya in Highland Park for six years and Izakaya Yume in Niles for seven, then opened this counter in 2018 with eight seats. It's down to six now -- the size chef Park found most comfortable -- spread across three seatings a night, and it held a Michelin star in the 2020 guide before losing it in 2024, though the food hasn't really changed. Non-traditional touches like kimchi puree and sesame oil work their way into fish flown in mostly from Japan.
